Back in December 2019, the couple wanted something special. Their chef’s challenge? Turning the Vietnamese classic Pho—traditionally made with chicken or beef broth and sometimes even featuring snake meat—into a plant-based, gluten-free delight.
Enter snake gourd: cleverly chosen to playfully mimic the “snake” motif while keeping the dish fully vegan. Stuffed with peanuts, coconut, tofu, and coriander, then smoked to perfection, this star ingredient anchored a rich lemongrass, ginger, and coriander root broth studded with water chestnut, enoki mushrooms, and chillies. Rice noodles kept it gluten-free, while chili oil added a spicy kick.
